IDAM by Alain Ducasse (IDAM) proudly announces a collaboration with one of the most celebrated figures in contemporary French cuisine: Chef Guillaume Galliot, Executive Chef at the three-MICHELIN-starred Caprice in Hong Kong. Taking place on 23 and 24 October, this exclusive two-day event will unite Chef Galliot with IDAM’s own Executive Chef Fabrice Rosso for a curated dining experience that will set a new benchmark for fine dining in Doha.

Driven by a shared philosophy of innovation and infusing contemporary cuisine with global references, the chefs will present a menu that draws on the rich language of French gastronomy while featuring unmistakable influences from further afield. With a clear reverence for Asian culinary tradition, Galliot integrates elements including sudachi lime, timut pepper, laksa, and beef, transforming these distinct ingredients into bold expressions of flavour that challenge convention and reimagine modern European dining.
